“When Pigs Fly”

It’s the kind of thing people say without thinking about it. A way to dismiss something as impossible.

Between me and my mom, the phrase flipped.

It stopped meaning “no, never” and started meaning yes, watch me.

Growing up, my mom placed pigs with wings around the house in as many places as you could think up. On the TV, in her car, by the toaster - if you could think it, a pig was there.

They were a way to remind my sister and I that anything was possible, and if someone told you that you couldn’t, you just smile and let them watch.

I’ve spent my career as a consultant - running projects, building software, and chasing “value”.

The more time I spent there, the more I wanted to make something real for myself. Something with weight.

As a home chef, I love to cook and to bake. I thought I was healthy by making it myself, but then I discovered how many additives are included in grocery store flours.

In my opinion, flour wasn’t broken and we shouldn’t have fixed it.

So: a flour mill.

Pigsty Mills makes four flours, each one telling a different story - baking, pasta, bread, and whole wheat. Additive-free. Grown close to home. Milled fresh and bagged the day it leaves the stones.

Flour should be fresh.

Our’s is milled the same week you buy it. Check the mill date on every bag.

Local should mean local.

Our grain is grown 84 miles away. We pick it up ourselves.

Ingredients shouldn’t be a list.

Our ingredient list has one word. Wheat. The End.

Why “Pigsty Mills”?

We named a flour company after a pigsty. On purpose.

That’s because the best flour comes from the messiest process - grain dust everywhere, stones grinding, bran flying.

The mess stays in the mill. The flour stays clean.

The name’s a joke. The flour isn’t.
